Salad is something people don’t really think about. Lettuce, cucumbers, a protein, dressing, and BAMM, a salad. But, when your trying to be vegetarian you have to be a little creative with it. There is something I like to do with all my salad. I love to make it with equal ratios. Your probably like “what the balls is equal ratios?” It’s simple: Equal parts lettuce to other ingredients. Other ingredients are like blueberries, strawberries, cucumbers, tomatoes, etc..
Here is a recipe using what I had in the fridge. But feel free to substitute and change it around.
1/2 pound of Baby Mixed Greens (the fancy looking lettuce that’s multicolored or any lettuce is fine.
1 Generous hand full of blueberries
1 Large Tomato
1 Large English Cucumber
5 Large Strawberries
Raspberry Vinaigrette Dressing or Extra Virgin Olive Oil (optional, you can add any dressing.)
Place the mixed greens in a large bowl.
Then dice the tomato, slice the strawberries thinly, slice the cucumber and peel/separate the clementine. Place it all in the bowl with the lettuce. Then add the generous handful of blueberries. Cut the lemon and squeeze the lemon juice on the salad. Mix well.
The idea is to use the ingredients with the salad to balance it out. I usually just eat it with the lemon juice, but my favorite dressing is raspberry vinaigrette, so I might just add enough to evenly coat the salad just before serving. Extra virgin olive oil is also a great substitute if you prefer it.
